Cookie Dough Cheese Cake

Have you ever thought about combining cheese cake and cookie dough? Well now is the time to do it. What you’ll be left with in the end is a seriously delicious pudding! And in the process you learn how to make your very own cookie dough. Ready to use for every occasion with ice cream or in a cake. The recipe I got as usual from the lovely CupcakeJemma’s channel.


You need for the Biscuit Base:
100 g digestive biscuits
50 g unsalted butter
50 g sugar

You need for the Cookie Dough:
50 g unsalted butter, soft
50 g light soft brown sugar
50 g caster sugar
3 tbsp Greek yoghurt
1/2 tsp vanilla extract
140 g plain flour
75 g dark choc chips

You need for the Cheese Cake filling:
200 ml double cream
500 g cream cheese
100 g icing sugar, sifted
1/2 tsp vanilla extract

Create the base for your Cheese Cake by crushing up your biscuits. Melt down the butter in a pan, add the sugar and the crumbs and mix everything together. Then take your springform and press the mix firmly down until you have a rather smooth base. Put the springform in the freezer to set the base a little quicker.
On to the cookie dough. Mix the two sugars and the butter. Then add the yoghurt, vanilla extract and the flour. Give it a whisk. Now chuck in the choc chips and give it one last whisk and there you have your very own cookie dough. With the dough, take a small piece of it and form a ball. Make twelve of them and set them aside. With the rest of the cookie dough layer it up on to the biscuit base.
The last step is to make the Cheese Cake filling. Whisk the cream cheese, the vanilla extract and the icing sugar together. When fully combined add the double cream and keep on whisking until you have a slightly stiff cream. Layer the cream up on to the biscuit and cookie dough base.
Take the twelve small cookie dough balls and decorate the cake with them. Now put the cake in the fridge for at least 4 hours or you can also leave it over night in there.
